Coconut oil is an amazing fat that breaks all the rules!!

- Whilst it is a saturated fat, it contains what are called medium chain triglycerides which speed up weight loss by increasing your metabolism.

- Coconut oil is the main source of dietary fat in Sri Lanka which has the lowest death rate from heart disease.

- Studies have also shown that people in tropical countries who consume coconut oil have a mild form of hyperthyroidism. Their metabolism is increased and they enjoy leaner bodies and higher energy levels.

- Coconut oil contains lauric acid which has an adverse on a variety of microorganisms including bacteria, yeast, fungi, and some viruses

Coconut oil has also been reported to be great for:

• Digestive problems
• Increasing your energy levels
• Reducing the furring of the arteries
• Constipation

Coconut oil is also the only oil worth cooking with. As a saturated fat, its structure won’t change when you cook with it, so all the above qualities remain unlike other oils such as olive oil. Great stuff!!

I'll usually have a couple of teaspoons every single day, usually in my chocolate sauce.

Metablolism boosting weight loss, appetite suppressing chocolate!

This 'Karen and Katrina in the Kitchen' video shows you how you can make this mouth watering chocolate.

Either use it as a dipping sauce with strawberries or other great fruits, or put it in the fridge to solidify then take out and roll into small balls and cover with cacao powder to make beautiful chocolate truffles. This amazing stuff is made up of only 3 ingredients!!

1 cup of cacao powder
1/2 cup of agave nectar or maple syrup
1/2 cup of coconut oil

Add whatever you'd like when making the sauce, we used chilli as well as ground hazlenuts. Delightful!!
